Tortilla Espanola Recipe

Tortilla espanola – is very popular in Spain and is often eaten as a “tapa” or snack. Tapas are a variety of small snacks – or small plate appetizers. The Spanish verb “tapar” means to cover. It is said that tapas (plural of tapa) originated as a cover for glasses – to keep the flies out. In time, snacks were added to the covers. Tapas can be hot or cold and include seafood, olives, cheese, meats and many more. They are often eaten in the early evening with drinks, since dinner in Spain is typically served at 10pm or later. This dish is a potato based small torte. It is also called tortilla de patatas. Patatas is the Spanish word for potatoes. In some regions, the word papas, is used for potatoes and it becomes tortilla de papas.

In addition to being a tapa, it is sometimes served as a light dinner. It can also be sliced and placed between two pieces of baguette, to make a bocadillo or sandwich.

Children love this dish consisting of eggs and potatoes; it makes a healthy choice. Your kids can help in the preparation by beating the eggs.


  • 6 white potatoes – peeled and cut into 1/8” slices
  • 6 eggs – beat together
  • 1 onion- diced
  • 2 cups olive oil or as need for for frying
  • salt to taste
  • Fry the potatoes and onions in oil using a non-stick fry pan (approximately 10 “) until cooked through. Add salt. Mix the fried potatoes and onions together with the beaten eggs.

    Coat the fry pan with oil and heat over medium. Pour the potato mixture into the pan and lightly pat down with a spatula. Brown on one side. In order to brown the other side, first place a plate over the fry pan and invert the torte onto it. Add a bit more oil into the fry pan and return the torte to the pan to brown the other side until done.

    I find the flipping step to be very difficult. So, I prefer to use a special Tortilla Espanola pan. All you need to do is flip the pan itself. It is foolproof. Click here for the pan. After browning both sides, let it sit for a few minutes prior to slicing. Slice in wedges – serves 6-8.
